Welcome aboard, always good to meet a new friend.
When we were in the electronic assembly business, we used to use two-piece LED holders to mount in panels. The larger section held the LED and snapped in the hole, then there was a retaining ring that was slid on from behind the panel that held everything secure. I'm not sure though that the ones we used were long enough to work on a 1/8" panel, but that was a long time ago and someone might make ones now that would.
