Well, there's no reason why you couldn't enter the same category more than once, or enter in more than one category. Whatever pleases you and whatever your time allows, there should be no restrictions.
As for adding a photo category, I don't know, that's kind of like mixing apples and oranges. If there's enough interest, we could run a separate photo challenge at the same time. Just thinking out loud, but looking for feedback.

We have had challenges like this in the past, but only as a separate challenge. The idea behind these challenges is to get us off our dead butts and to do something, so we just might add that as another category.

I definitely like that stalled project idea. I’m not sure if I will have the time to enter any of them now that I’m back to work. I’ll be watching for a photo contest in case one should pop up because I can definitely get in to one of those. If not, no biggie.
