That was actually "Mask of Zorro", a great flick. (Oh, and it wasn't dynamite, and Zorro wasn't trying to blow it up. It was nitroglycerine and the train was carrying it, it was out of control and Zorro and Elena were trying to get the heck off it!)
Well, if that's part of the plot, then it's Legend of Zorro, and it was filmed in New Zealand, not Australia.
You know what, you're right on both accounts now that I think about it.
