I've built a number of these handcars and they are very challenging (you're doing pretty good though). I've found that it might be better to assemble as much as possible before painting. I have also found that the parts are so delicate that the solvent-type glue can soften the part to the point that just touching it can break it.
Good call on stopping when you did to allow the parts the 'dry' out and regain the plastic's strength.
