The name is that of a real casket company in Hamilton, Ontario, and I always thought it to be somewhat apt, even though that first "E" is pronounced the same as that in "every" rather than as in "evil". The family was quite into philanthropy, too, donating a wing at one of the city's hospitals. The real plant wasn't served by rail, and mine depicts only part of the factory. However, there are two hidden industrial tracks under the staging yard, serving as an unmodelled switching district, and Evell will certainly be a tenant on one of those sidings.
