Placing Rail Served Industries On Layout Edge

Since the view of the coupler and trackbed is largely hidden by the unloading platform, I wondered if a small hole at a pre-determined spot would enable cars to be uncoupled from below, since uncoupling from above is pretty much out. Like I said - a weird thought.
